Four pots of chili worth making this fall

There’s nothing like a pot of chili simmering on the stove to make a chilly evening feel cozy. Now that the nights are getting darker and a little crisper, I’ve been making it on repeat, and I wanted to share four of my favorites with you. Some are rich and smoky, some are bright and fresh, and all of them come together without much fuss. Better yet, every one tastes even better the next day, so a big batch on Sunday means easy lunches and dinners all week.

Of all the chili recipes I make, this one is my personal favorite and the one so many friends and family have asked for the recipe.

And if you're looking for a way to use any chili leftovers, you need to try this recipe.

My shrimp Caesar pasta salad is everything I love about pasta salad and Caesar salad in one bowl. It’s creamy, crunchy, and ideal for weeknights because it’s easy to toss together and ready in just 25 minutes. See the recipe on my website here. 3 more pasta recipes you might enjoy: Want more? This sheet pan gnocchi with Italian sausage and broccolini is the kind of dinner that feels special but takes barely any effort. Everything roasts together in the oven — the gnocchi turns pillowy soft, the sausage browns, and the broccolini gets those perfect crisp-tender edges. A sprinkle of parmesan and a squeeze of lemon bring it all together in the easiest, most delicious way. See the recipe on my website here. Want more?
