Sour Cream and Chive Mashed Potatoes


These sour cream and chive mashed potatoes are one of my favorite easy side dishes. Yukon Gold potatoes get mashed with plenty of butter, sour cream, and fresh chives for a bowl that’s creamy, rich, and full of flavor. They come together quickly and are just as perfect for a weeknight dinner as they are for a big family meal.

This month, we're making one of my favorite spring sides: roasted dill carrots. These carrots are seasoned and then roasted until tender and sweet. Then the real magic happens: they are tossed in a lemon-feta-dill dressing that turns this simple root vegetable into something truly irresistible.

While I love these hot and fresh out of the oven, leftovers fare surprisingly well. Sometimes I'll make a double batch and enjoy the rest the next day.
